Yield: 5 Servings
Ingredients:
* 1/2 Cup black lentils
* 2 Persimmons
* 5 Celery stalks
* Purple onion
* Olive oil
* Lemon
* Salt and pepper
Instructions:
1. Cook the lentils with 1.5 cups of water, in a small pot. Bring to a boil, lower the heat and cook for about 25 minutes until the lentils are soft. Sieve and cool the lentils.
2. Cut the persimmons, celery and the purple onion into thin slices, and mix with the lentils.
3. Season with olive oil, lemon, salt and pepper.
